Easy Ground Beef Casserole With Rice BETTER


Which actually, as strange as it sounds, I thought was a very valid question because I can imagine how irritating it would be to watch that stuffed peppers video and drool when the juicy beef rice filling comes oozing out, knowing full well you have no peppers in your fridge.


Essentially, it starts by browning the beef with onion and garlic, then you add a ton of Mexican spices, rice and liquids then you give it a big stir and let it simmer away on the stove until the rice is tender.


To give it a good slug of extra flavour, I like to stir in cheese as well as green onion for freshness (I also like doing this because I get a kick out of watching the cheese melt into the rice ), top with a bit more cheese, clamp the lid on and leave it for a minute to let the residual heat to melt the cheese.


And this Mexican Rice Casserole is the latest addition to my ground beef recipe collection. Other than Bolognese (which is, without a doubt, the recipe I make most often!), a few of my other favourites include:


When I need to get dinner on the table fast, I normally turn to ground beef recipes. They cook up fast and ground beef is so versatile. Plus, even my picky eaters like ground beef dinners. This cheesy ground beef and rice casserole is favorite among the entire family!


One of the best things about a slow cooker is that you can put all of the ingredients for a meal in it, turn it on, and then go about your day. For this beef and rice casserole, simply brown the beef, then add it to the slow cooker with the rice, vegetables, and seasonings. Let it cook on low all day, and then enjoy a delicious and hearty meal at the end of the day. Add the cheese at the end.


If you are using the stove top cooking method, you will need to cook the rice before adding it to the casserole. However, if you are using the crock pot or Instant Pot, you will not need to cook the rice.


The answer is yes, you can use Minute Rice for Beef and Rice Casserole. Minute Rice is fully cooked, so it will cook faster than regular rice. Just be sure to follow the package directions for how much water to add, and the time it takes to cook. You may need to add a little more water than called for since Beef and Rice Casserole has a lot of other ingredients that will absorb some of the water. Other than that, just continue to make the casserole as directed.


In a large skillet (I like to use my cast iron here or a nice heavy non-stick pan), add the ground beef and garlic salt to season. Cook and crumble the ground beef until browned and cooked through, and be sure to drain off the fat.


Pair this savory casserole dish with a fresh green veggie, corn on the cob, or salad. A dinner roll or cornbread goes perfectly as well. That is what is excellent about comfort dishes; they don't need much else to make an unforgettable meal.


Hi love this but we switched the rice with instant rice and this gets rid of the crunchy rice or having to add more water and such. Love the ease and cost. Also didnt use taco seasoning just the spices and salted the end. We avoid the salt due to health reasons. Thanks again.


I used Mexican chorizo that I took out of the casing, browned, crumbled and drained. Because the chorizo was highly seasoned I did not add any additional seasoning except for salt & pepper. Included a jalapeño seeded and diced along with the onion and garlic. I used a 14.5 oz. can of stewed tomatoes, undrained plus and equal amount of chicken broth. I used brown rice that I rinsed and soaked covered with water for a couple of hours, then drained, as this hastens the cooking time. I did add the black beans, but eliminated the corn and cheese.Tip: Taco seasoning has a thickener in the mix that would absorb some of the liquid and that could possibly be the cause of underdone rice. I would recommend using chili powder, cumin and ground coriander instead.


I too used Chorizo and mixed it with ground beef. I did not have canned diced tomatoes
